Default M2 Cyclone build(café racer)

So I havent really started much yet. I bought the bike many years ago and it sat for more years then I have ridden it unfortunately due to Navy life and deployments. I want to get started. I want to change the tail and seat out(need advice on where to get or have built). I want to change it to wire wheels and different for set up(if its not a ridiculous cost. I want to change exhaust and maybe some engine work and also get the electrical cleaned up and go to a cafe racer style handlebar or clip on type set up. I Want to make it clean and simple. Any ideas from the group or where to go to start. I have some building and skills as far as welding and mechanical but would like to have a few things professionally done.

Given the donor engine, any chance a Harley rear hub would fit?
