What Casper said. Between 4K growing more popular, the overall affordability of quality screens, and with games such as Forza and Gran Turismo (both of which are HUGE) already supporting multiple monitor (albeit, by way of using multiple machines on a network to do it), and a lot of large games supporting network play (Halo, for instance, where everybody sees the same parts of the maps in the same details as they see the opposing characters), technically everything is there to make it work.

People are getting more into VR, and people have always loved sims. There's a far larger market than anyone gives credit for. The technology to run multi monitor already exists. The technology to run a GREAT multimonitor EASILY recently came out. They call it Thunderbolt

I still don't think you're going to see multimonitor on a console, at least not until the graphics connection standard changes again and there's enough bandwidth to support a three screen output on one connector. Putting multiple graphics connectors on a console would just increase cost for no gain, console owners hook them up to their TVs in their living rooms. Just think of how little customization you are allowed on a console. If you want to do cool stuff you need a PC like you always have.
There's a reason Forza was pretty much the only game for the xbox that supported multiscreen, only a very small demographic of people are going to go out and buy three consoles for multiscreen. I think the only reason it was coded into the game at all was so they could make semi-professional racing simulators. It was just a bonus that the public got the capability.

The technology to do all kind of neat stuff already exists, but if the market is too small or there is patents to negotiate then it doesn't reach the public.

Thunderbolt can daisy chain. I realize it's primarily a Mac format, it combines PCI-E with Displayport. But it could theoretically be worked into a next gen console, to allow for the potential expansion of displays or other peripherals.

If you're into sprint/dirt track, check out the Legends Cars (Finland) for rFactor, I gave up far too many hours of free time to those high revving bike powered monsters. The circuit versions are the ones I spent the most time in as well, incredibly fun.

It's not terribly cheap, but, if you want a good dirt track simulator I would highly suggest World Racing Series, and one serial key from Piboso unlocks both GP Bikes and World Racing Series, so for the price it's well worth it.

Terrain deformation, "push truck" starts, 4 variations of sprintcar, and a whole ton of planned features as the sim is developed. It seems there is pretty regular updates although I pay far more attention to the GP Bikes part of the forum over there.

Steam also has a few road circuit sales today.

Assetto Corsa with all three dream packs is only $30 and Project Cars with all of the DLC is $21.
