If you have the carbs off, the general rule of thumb is that if you flip them upside down, the float arm should be level, or parallel with the lip where the bowl mates to.
Some carbs I've seen have a little index mark on the outside of the bowl for checking float level. Stick a bit of suitably sized clear hose on the bowl drain nipple, and hold the other end up next to the carb. Open the bowl drain screw(with the bike vertical) and the level of the fuel in the bowl will be indicated by the level in the hose. It should line up with the index mark on the bowl.
If it's a little off it's not really a big deal, as long as it's close.
